Positano, the 110 cover Italian restaurant in central Guildford has just taken delivery of a Cimbali M100 Attiva and Franco Terracciano, owner-manager, could not be happier.

“I am very proud to own a Cimbali machine. It’s such a prestigious brand, renowned the world over,” said Franco. “We’re so pleased with it that we have it on the front counter where it takes centre stage and makes a real design statement.”

Aside from looking super cool, the M100 Attiva, of course, delivers exceptional coffee quality as Franco explained:

“I grew up with traditional espresso machines where we had to pump a lever to get the pressure needed to pull a shot. This was quite a skill and took time and alot of patience to master. But the end result was always worth it. In my opinion, the Cimbali Attiva offers the same level of quality, but is so much easier to use than those old lever machines.

“One of the main advantages is the way the M100 manages all stages of the brewing process. All the drinks are preset into the machine and this takes the guesswork out of drink prep and consistency is guaranteed. Another advantage is the Smartboiler which speeds up service and ensures we always have enough steam and water to make the drinks even when we are really busy.”
